High Fibre Peri-Peri Chick Pea Ciabatta


1 Ciabattine / Ciabatta
2 tbsp tinned cooked chick peas
1 tbsp mayonnaise, light
1 tbsp greek yogurt, fat free
1/2 tbsp Peri-Peri chili sauce
1 tsp mango chutney
1 tsp lime juice
2 slice tomato
2 baby gem lettuce leaves
1/2 carrots, grated
1 pinch/es of salt and pepper


  • Roughly mash the chick peas with a fork. Mix the mayo, greek yogurt, peri-peri, mango chutney, salt, pepper & lime juice into a separate bowl then combine with the chick peas.
  • Layer the baby lettuce and sliced tomatoes onto a sliced Schar White Ciabatta roll.
  • Add the chick pea filling and top with some grated carrot.


Vegan alternative: Replace the greek yoghurt with natural soya yogurt and replace mayonnaise with a ‘free from’ mayonnaise.
